Berry and Cheese Pancakes
This new brunch discovery is edit-able... you can choose your berries and choose your cheese. After a few trials using brie first, then yogurt cheese, then soft Swiss cheese.... I think brie is the best. Next time I'm going to try Giatta's favorite, "marscapone". Here's what I did:
Make pancake mix. Add chopped up strawberries (chopped small), and blueberries into the mixture. Pour onto heated pan and while one side is cooking sprinkle pieces of brie cheese around on top. Then once those bubble start popping clean holes. Flip it, like you do!
